Raw, Vegan Chocolate

¼ cup cacao butter
¼ cup of coconut oil
1/3 cup of carob powder (this is the secret ingredient that makes it creamy 🙂 )
2 tsp. of vanilla extract
½ cup of cacao powder (the good quality one from the healthy food store 🙂 )
3 tbsp. of maple syrup (not the ‘maple flavoured syrup’!)
½ cup of mixed nuts (a few macadamias, brazil nuts, almonds, cashews)

  1. Pound nuts into rough, smaller pieces in a mortar and
    pestle (you still want chunks, not powder), spread out on greaseproof paper on a tray
  2. Melt cacao butter and coconut oil in a small pot on a medium heat.
  3. Add to dry ingredients
  4. Whisk together until smooth
  5. Pour over the nuts and leave in freeze until hard
  6. snap into the piece size you like (they will be a different, but that looks great!)
  7. Eat and enjoy 🙂
