Healthy Chocolate Crackles (and why you need to eat this!)

Most of us remember biting into a chocolate crackle as a kid….they were awesome!

Im not going to go down the track of ‘parent bashing’, as most were doing the best they could, but I think that we have learnt enough about the harmful effects of too much sugar in the diet to ditch it and create healthier options!

So, Im pretty excited about this healthy chocolate crackle swap.

Its super easy too, which is always a bonus:)

What you need:

4 cups of puffed rice (I use ‘abundant earth’ brand from the health section of the supermarket)

1 cup of coconut oil

A snap before sticky little fingers grabbed one!

1 cup of coconut (shredded)

1/4 cup cacao powder

3 tbsps rice malt syrup

1 tbsp cinnamon

1 tbsp vanilla extract

What you do:

mix all ingredients (except puffed rice)

mix in puffed rice

spoon into cupcake cups and leave in the fridge to set.

 

The nutritional Lo’ Down:

Puffed rice provided carbohydrates and B vitamins for energy.

Coconut oil provides essential fats to stabilise blood sugar levels (as does cinnamon) and is an energy source that doesn’t put strain on the liver (most fats need to be metabolised via the liver, which can be a stressor).

Cacao is a great source of magnesium, which MOST people are deficient in, and other antioxidants that are incredibly protective and nutritive to the body.

Put it this way, there isnt a system, organ or biochemical pathway that doesnt rely on magnesium for proper function!

The whole package mixed together like this provides your kids (and you!) a little power house of sustained energy and tastiness that will ensure that the lunchbox comes home empty…..and not because contents have been sneakily thrown in the bin!

    Hello, these look great, but I’m hesitating as a lunchbox addition because the cocount oil goes floppy out of the fridge, usually. Have you had a go (melbourne winter should be favorables tho!)?

      Hi Becky,
      I find that the coconut oil is fine and it all stays together quite well with enough icebricks in the lunchbox.
      I generally make the lunch quite early in the morning and then put the box in the fridge, by the time we walk out the door, I pop the ice bricks into an already cold box. Seems to be work:)
