Fudgy Brownies

2 cups shredded zucchini
1 cup macadamia butter (OR almond butter)
1 egg
1/3 cup maple syrup
2 tsp. vanilla extract
1 cup chocolate chips
3 Tbsp. cocoa powder
1 tsp. baking powder

  1. Preheat oven to 350.
  2. In a food processor, combine all the ingredients and mix well.
  3. Pour the batter into a pan lined with baking paper.
  4. Bake for 45 minutes.
  5. Let the brownies cool and then cut into squares
  6. Store them in an airtight container in the fridge.

(Also freeze if making a big batch!)
