Ok, so there is always a balancing act of serving food that the kids will ACTUALLY eat and food you WANT them to eat….
The lowdown on fat:
Don’t be afraid of good fats (such as coconut oil), especially for your children – having these fats in their day will regulate blood sugar levels (helping with behaviour and concentration), provide sustained energy and fuel the brain (remember the brain is mostly fat!)……..this is a winning combination I think!
So get in the kitchen… these muffins are super easy to make and will be a hit in the lunchbox:
1 cup of blueberries (fresh or frozen)
2 cups of spelt flour
3/4 cup of coconut sugar (Or you can use the equilivant of stevia)
1 egg (lightly beaten)
3/4 cup of milk (our choice – I use coconut, rice, oat or almond)
1/2 cup of coconut oil (melted)
1. mix dry ingredients together
2. Add wet ingredients
3. Add blueberries last (especially if you are using frozen – they can make the coconut oil harden, but persevere!)
4. Mix together and add to patty cases or muffin tray
5. Cook for about 25 mins at about 150 degrees (I prefer to cook on a lower heat to avoid ‘burnt on the outside, mushy on the inside’ syndrome).
Not just for the kiddies, I admit that I adore one of these muffins with my mid morning tea:)
