Banana, Lemon & Coconut Muffins (easy peasy!)
2 Cups almond meal
2 whole eggs
2 mashed bananas (slightly chunky)
Juice of 1 lemon
½ cup water
2 Tbsp. Peanut butter (100% peanuts and nothing else!)
2 Tbsp. shredded coconut
2 Tbsp. natural yoghurt
1 Tbsp. rice malt syrup/coconut sugar
1 tsp. cinnamon
- Put all the ingredients in a bowl & mix well.
- Bake at 180-200 degrees Celsius for approx. 15-20mins.
Have one for morning/ afternoon tea with your favorite cuppa!
