Avocado Breakfast Bake

Serves: 2

Ingredients

2 avocados
4 eggs
salt and pepper

Toppings:
– feta and red onion (or)
– salsa and fresh coriander

Instructions

  1. Preheat the oven to 250 degrees.
  2. Cut the avocados in half and remove  pit.
  3. Put avocados open side up in a large baking dish.
  4. If they are small avocados, scoop out a little of the extra flesh to make more room.
  5. Crack an egg in each avocado half and sprinkle with sea salt and pepper.
  6. Place in the oven until egg is as cooked as you like it.
  7. Top with desired toppings
  8. Enjoy while still hot
